The Hospitality Program at Clyde C. Miller Career Academy “traveled around the world” with their recent international menu and recipe project.
Twenty two students under the direction of Executive Chef Marianela McInturff, used iPad technology to research countries of the world and cities in the USA after the random selection of a nation or well-known American city. Great Britain, Jamaica, Brazil, China, Italy, New Orleans, and St. Louis were represented in the project.
A power point about the nation or city was created by students, and recipes for an appetizer, entrée, and dessert typical of the geographic area were selected. Students then developed order sheets, prep sheets, tablescapes, dining room layout, and practiced mise en place. The recipes were then prepared in the culinary kitchen and served in the CC Miller Dining Café.
Tablescapes, food presentation, and food flavors were evaluated by professional chef, Janet Wilson, a hospitality and food service professional who serves on the CC Miller Hospitality and Culinary Advisory Committee.
School administrators and CC Miller teaching professionals also evaluated the student’s displays and enjoyed tasting the culinary delights of the world.
The Hospitality Program is part of the Career and Technical Education division of the St. Louis Public Schools.
